Melee Defense lets you use Dodge, Acrobatics, Punch, Kick, Grapple or Shield skills with the usual unskilled penalty if you are unskilled. Assume I don't have any of those skills (hey, I'm a real Tsolyani, not a dungeon crawler) and I have a DEFT of 10. Is this my correct Melee Defense using the various skills:

Dodge: 9 - 10 = -1
Acrobatics: 6 - 10 = -4
Grapple: 9 - 10 = -1
Kick: 10 (since it gives you +1 to hit) - 10 = 0
Punch: 11 (since it gives you +2 to hit) - 10 = 1
Shield: 9 - 10 = -1

It seems that clearly, the best defense is a good offense.

Some slight corrections:

The modifiers to hit for Kick and Punch don't apply to defense. Same goes for weapon modifiers to hit, by the way.

And what you wrote for melee defense using a shield *is* correct, but remember that shields *do* give you a defense bonus.
